Barbecued Tempeh

Ingredients:

  • 8 ounces tempeh, cut into small cubes
  • 3 tablespoons vegetable oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground cayenne pepper
  • 1 green bell pepper, chopped
  • 2 tablespoons tamari
  • 2 tablespoons lemon juice
  • 3 tablespoons molasses
  • 2 tablespoons cider vinegar
  • 1 tablespoon dry mustard
  • 6 tablespoons tomato paste
  • 1 cup water
  • 4 dashes Tabasco sauce

Preparation:

Sauté onions, garlic, and spices until onions soften. Add peppers and tempeh cubes; continue to sauté for about 5 minutes. Transfer to a shallow baking pan.

Whisk together tamari, lemon juice, molasses, vinegar, mustard, tomato paste, and water. Add sauce to the vegetables. Bake at 350° for 30 minutes covered; uncover and cook for 30 minutes longer. Stir frequently throughout cooking time.

Serve with rice or use to stuff pita.
