Fruit Cocktail Upside Down Cake

INGREDIENTS:

  • 2 tablespoons butter
  • 1/4 cup light brown sugar
  • 1 cup fruit cocktail, drained
  • 1 cup sifted cake flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 eggs, separated
  • 1 cup granulated sugar
  • 1/4 cup cold water
  • 1 teaspoon vanilla

PREPARATION:

Melt butter in a 9-inch square baking pan. Sprinkle brown sugar over the butter. Spoon fruit cocktail over the brown sugar.

Sift together the flour, baking powder, and salt. In a bowl, beat egg whites until stiff peaks form. Add the egg yolks and beat. Gradually beat in the granulated sugar. Fold dry ingredients into the egg mixture. Stir in the cold water and vanilla; blend well then pour over fruit. Bake at 325° for 50 to 60 minutes. Cool in pan for 10 minutes, then turn upside-down onto a serving plate.
