Prepared chutney and green onions make a flavorful sauce for these easy skillet chicken breasts.

Ingredients:

  • 2 to 3 teaspoons olive oil
  • 4 boneless chicken breast halves, skin removed
  • salt and pepper
  • 1/4 cup flour
  • 2/3 cup chutney, peach or mango
  • 1/2 cup chicken broth
  • dash garlic powder
  • 1/4 teaspoon dried leaf basil
  • 6 to 8 green onions, thinly sliced

Preparation:

In a large skillet, heat olive oil over medium-high heat.

Sprinkle chicken with salt and pepper; dust lightly with flour.

Place chicken in hot skillet and cook for about 4 minutes on each side, or until nicely browned. This will take a little less time if you flatten the chicken breast halves before cooking. Combine the chutney, chicken broth, garlic powder, and basil. Pour over the chicken. Cover; reduce heat to low and cook for 10 to 15 minutes, or until chicken is cooked through. Add green onions and cook for 1 minute longer.
Serves 4.
