Plum Cobbler with Dumpling Topping

Ingredients:

  • 1/2 cup sugar
  • 1 T brown sugar
  • 2 T cornstarch
  • 1 cup water
  • 6 cups assorted plums, pitted and cut into 1/2-inch slices
  • 1 teaspoon grated orange zest
  • 1/8 tsp almond extract
  • .
  • Topping Ingredients
  • 1 cup flour
  • 3 T sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cups oats
  • 5 T unsalted butter
  • 1/2 cup milk
  • cinnamon sugar

Preparation:

Mix the 1/2 cup sugar, brown sugar, cornstarch, water, and plums in a saucepan. Cook over medium heat until thickened, about 5 minutes. Remove from heat.

Add orange zest and almond extract then pour into an 8-inch square pan. For topping, sift flour, 3 tablespoons sugar, baking powder, and salt into a large mixing bowl. STir in the rolled oats. Cut in the 5 tablespoons of butter until mixture is crumbly then stir in the flour until a soft dough is formed. Spoon over the fruit. Sprinkle cinnamon and sugar over top. Bake in lower third of oven at 400° for 25 minutes until golden and bubbling. Serve this cobbler warm with cream or ice cream.
