Ingredients:
- 1 egg
- 1 1/2 cups buttermilk
- 1/2 teaspoon baking soda
- 1 1/2 cups cornmeal
- 1 teaspoon salt
- 1/2 cup sifted all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon sugar
- 1/4 cup shortening
Preparation:
Preheat oven to 450°. Place corn stick pan in oven to heat.Beat egg; beat in buttermilk and soda. Sift together the dry ingredients; add to egg and buttermilk mixture and beat to combine thoroughly.
Generously grease pan with butter; fill almost full with the batter. Bake at 450° for 10 to 15 minutes, until browned. Finish under broiler to brown more, if desired.
