Johnny Cake Recipe

Ingredients:

  • 3/4 c all-purpose flour
  • 1 teaspoon baking soda
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups cornmeal
  • 2 eggs, beaten
  • 1/4 cup vinegar
  • 1/4 cup melted shortening

Preparation:

Sift together flour, baking soda, sugar and salt; stir in cornmeal. Whisk together eggs, vinegar, and shortening; add to dry ingredients, stirring just until moistened.

Heat a well-greased 9-inch cast iron skillet in a 400° oven for 3 to 4 minutes or until very hot. Spoon batter into hot skillet. Bake at 400° for 30 minutes or until lightly browned.
