Crockpot Prune Dessert

By Diana Rattray, About.com

Crockpot stewed prunes with lemon and orange peel, topped with whipped topping or whipped cream.

Ingredients:

  • 2 cups prunes (the dried, pitted kind)
  • water to cover prunes, for soaking overnight
  • 2/3 cup boiling water
  • 1/2 cup sugar
  • 1/2 cup sugar
  • strips of peel from 1/2 lemon or 1/2 orange
  • 1/4 cup almonds or 1/4 cup walnuts (chopped)
  • Whipped cream or whipped topping

Preparation:

Soak the prunes in water overnight to plump them. Take them out of the water and put in slow cooker. Add the 2/3 cup boiling water, sugar, and citrus strips. Cook on HIGH for 3 hours. Remove the citrus peel, discard, and place the prunes in dessert serving dishes. Chill. Serve with chopped nuts and whipped cream or whipped topping.
