Ingredients:
- 1 1/2 pounds lean ground beef
- 1 cup beef broth
- 1/2 pound Italian sausage
- 1/2 cup milk
- 1/4 cup chopped onion
- 1/2 teaspoon salt
- 1 cup instant mashed potato flakes
- 1/2 teaspoon Italian seasoning
- 1 egg, slightly beaten
Preparation:
First, make foil "handles." Fold a 20 to 30-inch long piece of foil in half lengthwise (depending on size of crockpot). Place in bottom of a slow cooker with both ends hanging over top edge of cooker.The foil strip will make it much easier to remove the meatloaf when it's done. I also put a piece of crumpled foil in the bottom to keep the meatloaf out of the fat.
In a large bowl, combine all ingredients. Shape into a round loaf. Place
on foil in crockpot.
Loosely fold ends of foil over loaf. Cover; cook on LOW 6-7 hours. Holding
ends of foil, lift meat from pot. Cut into wedges. Makes 6 wedges.
