Crockpot Vegetable Medley

Favorite fall veggies; imagine this dish with a beef or pork roast.

Cook Time: 8 hours

Ingredients:

  • 1 medium cabbage
  • 1 small rutabaga, cut in chunks
  • 1 bunch celery
  • 2 dozen baby carrots
  • 2 medium onions, cut in chunks
  • 1 envelope dried onion soup
  • 1 can (14.5 ounces) tomatoes
  • 1 can (12 ounces) V-8 juice
  • 1 cup garbanzo beans or other cooked beans, optional

Preparation:

Combine all ingredients in crockpot. Cover and cook on LOW for 8 to 9 hours, until vegetables are tender.
