Red Cabbage with Apricots

To make chopping the apricots easier, chop on a lightly floured board and dip knife in flour from time to time. Scroll down to see more red cabbage recipes.

Cook Time: 6 hours

Ingredients:

  • 2 1/2 pounds red cabbage, thinly sliced
  • 1 cup finely chopped dried apricots
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1/2 cup dry red wine
  • salt

Preparation:

In a 4-quart or larger slow cooker, combine cabbage and chopped apricots. In a small bowl, mix honey and lemon juice; drizzle over cabbage mixture. Pour the wine over cabbage. Cover and cook LOW until cabbage is very tender, about 5 1/2 to 7 hours. Season to taste with salt.
