Lemon Sponge Dessert

A recipe for a lemon sponge dessert, made with eggs, butter, lemon, and milk.

Cook Time: 45 minutes

Ingredients:

  • 2 tablespoons butter, softened
  • 2 cups sugar
  • 4 tablespoons flour
  • 1/8 teaspoon salt
  • 5 tablespoons lemon juice
  • peel of 1 lemon, finely grated
  • 3 eggs, separated
  • 1 1/2 cups milk

Preparation:

Preheat oven to 325°. Cream butter; add sugar, flour, salt, lemon juice and lemon peel. Beat egg yolks; stir in milk then beat into lemon mixture. Fold into stiffly beaten egg whites. Turn into a 2-quart baking dish set in a pan of water; bake 45 minutes or until inserted knife comes out clean. Refrigerate before serving.
Serves 8.
