Cook Time: 18 minutes
Ingredients:
- 1 recipe for pastry (one with about 2 cups flour)
- 4 eggs
- 1/2 cup sugar
- 1/8 teaspoon salt
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 cup fine curd cottage cheese
- 1 cup flaked coconut
Preparation:
Have all ingredients at room temperature when starting.
Line tart pans (3- to 4-inch in size) with pastry. Beat eggs in top of
double boiler. Add sugar, salt and milk; put mixture over boiling water
and cook, stirring constantly, until thickened. Remove from heat and add
vanilla. Gently fold in coconut and cheese. Pour into tart shells and
bake at 425 degrees F. for 15 to 18 minutes.
Makes 12 small tarts or 7
large ones.
