Grilled Dijon Mustard Chicken

This grilled chicken is easy to make with Dijon mustard, butter, and chicken broth.

INGREDIENTS:

  • 1/4 cup butter, melted
  • 8 chicken pieces, about 2 1/2 to 3 pounds
  • 1 1/2 cups seasoned chicken broth
  • 1/4 cup Dijon mustard

PREPARATION:

Brush chicken with butter and set remaining butter aside. Arrange chicken on oiled grill, skin side up about 4 inches away from medium hot coals. Grill chicken until browned, turning and basting with the butter once. Keep flares extinguished with water. Add chicken broth and mustard to remaining melted butter in a metal pan; mix well. Place sauce at the edge of the grill so it will stay warm. Brush chicken generously with the sauce and grill for 30 to 45 minutes, or until tender. Turn and baste as needed to cook evenly and prevent burning. Boil remaining sauce for 1 minute and serve with the chicken.
Serves 4.
